Crumb Cake

Crumb Cake is one of those things we always get when we go to Starbucks. Always. If they have a slice we’re eating it. James is so European and he doesn’t even know it. He loves having his coffee with the little pastry cakes. Honestly the crumb part I wasn’t too crazy about. I will however be using this recipe to make a certain puppy who will be three in December her birthday cake. We’re crazy dog people we know. If anyone makes this, or anything else on here for that matter, post a comment telling me all about.

Ingredients

(Crumb Topping)

1 cup and 2 Tbsp of all purpose flour
1/3 of a cup packed light brown sugar
1/3 of a cup sugar
1 teaspoon of cinnamon
A pinch of salt (thumb and forefinger)
1 stick of unsalted butter melted

(Cake)

1 cup of all purpose flour
3/4 of a teaspoon baking powder
A pinch of baking soda (thumb and forefinger)
5 Tbsp of unsalted butter softened
1/2 of a cup of sugar
1 egg
1 tsp of vanilla extract
1/4 of a cup of milk
1/4 of a cup of sour cream

Directions

Preheat the oven to 350 degrees F

Grease a 9 by 9 baking pan (if you want to remove from dish add parchment paper for an easy lift)

(Crumbs)

Whisk together the brown sugar, sugar, cinnamon, and salt

Pour in the melted butter and stir till combined

Add your flour in 3 to 5 scoops at a time blending together between each pour

Completely blend together and set aside

(Cake)

Whisk together flour, baking powder, baking soda, and salt

Whip together the butter and sugar till fluffy (again no electric mixer so I went stone age and combined with a fork then my hands to get the same result)

Add the egg and vanilla to the sugared butter (begin using a greased wooden spoon)

In a separate bowl mix together sour cream and milk (you should have one bowl all dry, one bowl all wet, and one bowl with the butter, sugar, egg, and vanilla mixture)

Add 1/3 of your flour mixture into your butter mixture and stir till combined

Add 1/2 of the milk and sour cream mixture and stir till combined

Add you second 1/3 of flour and again stir till combined

Add you second 1/2 of milk and sour cream and again stir until combined

Finally add in your third 1/3 of flour and stir till combined

As you stir raise the spoon with batter up and fold back in several times to help capture air (it helps with the moistness and fluffiness of white cake)

Pour the batter into the pan spreading evenly

Add the crumb mixture on top one handful at a time, sprinkling from above

Be sure to evenly cover the batter

Bake for 35 minutes (a knife should come clean when done)

Allow it to cool in the pan for 10 minutes before removing or serving
