Lime and Cilantro Chicken

This is One of James’s favorites that I make. It is really delicious and it’s great because it’s so easy to adjust how spicy or how sweet you want it to by adjusting the hot sauce to honey ratio and the type of peppers you use. I make ours with enough spice to tingle your tongue.



Ingredients


Package of skinless boneless chicken thighs (ours come with about 6)
1 Tbsp of paprika
1 Tbsp salt
1 Tbsp sugar
Juice of 2 limes
1/2 of a cup of olive oil
1/2 of a cup of hot sauce
2 Tbsp of honey
3 Tbsp of butter
2 serrano peppers sliced
Two handfuls of cilantro

Directions


In a bowl large enough for all your chicken mix together the paprika, salt, sugar, lime juice, and olive oil (roll your limes with light pressure before cutting to release the juices easier)

Allow you chicken marinate in the mixture for at least 2 hours (we normally do ours for 4 hours)

Allow chicken to come to room temperature after marinating while your oven preheats to 425 degrees F

Place your chicken into a baking dish along with the marinade and bake for 20 – 25 minutes

On the stove top mix together the hot sauce, honey, butter, serrano peppers, and cilantro leaves

Once the butter has melted and everything is combined cover and allow it to simmer while chicken finishes

Once the chicken is done plate it and spoon the sauce over top

The chicken baked in the marinade is great on it’s own as well
